heart shaped salmon!

drying meat was a practical way to keep it from spoiling. strips of whale, caribou, seal, or fish meat were hung from tall wooden racks, allowing the air and sun to slowly dry the meat.

happy fat!

the saturated fats you consume from grass-fed beef, poultry, pork, eggs, fish & seafood will not promote heart disease, cancer, or any chronic health problem. in fact, these foods can ensure your birthright - a long, healthy, and happy life.

gelatin bouillon

sally fallon:
when broth is cooled, it congeals due to the presence of gelatin. the use of gelatin as a therapeutic agent goes back to the ancient Chinese...although gelatin is not a complete protein, containing only the amino acids arginine and glycine in large amounts, it acts as a protein sparer, helping the poor stretch a few morsels of meat into a complete meal. during the siege of paris, when vegetables and meat were scarce, a doctor named guerard put his patients on gelatin bouillon with some added fat and they survived in good health.

'chickenness'

the ability of a chicken to express its natural inclinations - to behave like a chicken and enjoy its 'chickenness'...what makes eggs healthy and nutrient-dense is hens having access to the outdoors, to sunlight, to bugs, and to grass.

[weston price] concluded:
the common denominator of good health was to eat a traditional diet consisting of fresh foods from animals and plants grown on soils that were themselves rich in nutrients

four times more!

[Dr. Weston] Price found that all primitive diets contained at least four times the quantity of minerals and water-soluble vitamins as the American diet of his day - which was far superior to that of today's diet. Price, along with other pioneering doctors who studied native cultures during the first half of the twentieth century, found that many of these peoples enjoyed robust health and had excellent physiques - until they adopted what Price referred to as a 'white man's diet' (refined and processed foods that included white sugar, flour, pasteurized milk & hydrogenated vegetable oils).

switzerland

switzerland's...alpine pastures are the source of many of her best-loved products. traditional swiss food is rustic and regional, as might be expected from a nation of farmers. there is a strong organic and biodynamic movement, and feeling part of nature is important to many swiss families. the tiny eating places nestling halfway up a steep vineyard or carved into caves provide seasonal and regional food
