hey mambo!
melody has the power to lift us up. because of this, listening to melodious music can be extremely relaxing. when we are in that high, transcendent place, we are not aware of the stresses and anxieties we may live with every day. we are, for the time the music is playing, free!

3 million years!!!
our human and prehuman ancestors had lived for 3 million years with a remarkably high level of health, eating only [grass-fed] meats, seafood, nuts, seeds, and SEASONAL fruits and vegetables. the agricultural "revolution" saw our ancestors become small, weak, and sick. infant mortality exploded.

history, science & nature
history, science & nature all lead us back to grass-fed beef
despite the fact that there has been some adaptation by human beings over the last several hundred thousand years, we are still "cavemen" from a nutritional standpoint. the optimal nutrition present during that period when the human gut and immune systems evolved consisted of fruits, vegetables and wild game for the most part. the meat in this wild game was very similar to that which can be acquired through pasture-feeding of modern livestock. most research suggests that our ancestors consumed more lean, pasture-fed animal protein than contemporary man. they also consumed much larger amounts of fruits and vegetables, had higher potassium and calcium content in the diet, and rarely depended on sodium-rich foods or grains. the extent to which modern diets can recapture these evolutionary concepts may guide us away from any of a number of chronic inflammatory diseases, insulin resistant diabetes, and obesity. one basic fundamental of this so-called "paleo-nutrition" is the consumption of pasture-fed meats instead of grain-fed meat.

you are me!
i used to believe that there was a you and a me. then i discovered that there's no you, that in fact you are me. there aren't two to take care of, or three, or four, or a billion. there's only one. the relief of that! it's enormous!
'you mean there's nothing to do? that if i'm okay, everything is okay?'
yes, that's exactly it. it's self-realization. everything falls sweetly, effortlessly, into your lap.

lush grasses & pretty cows:)
food is like a language, an unbroken information stream that connects every cell in your body to an aspect of the natural world. the better the source and the more undamaged the message when it arrives to your cells, the better your health will be. if you eat a properly cooked steak from an open-range, grass-fed cow, then you are receiving information not only about the health of that cow's body, but about the health of the grasses from which it ate, and the soil from which those grasses grew. if you want to know whether or not a steak, or a fish, or a carrot is good for you, ask yourself what portions of the natural world it represents, and whether or not the bulk of that information remains intact. this requires traveling backwards down the food chain, step by step, until you reach the ground or the sea.

dear french chef,
what would be your last meal on earth?
the chicken would be from Landes,
very big & fat,
roasted simply in duck fat with garlic & bay leaf
and basted during the cooking
so that its skin was very crunchy,
and the sauce would just be the juice,
deglazed from the pan and with the fat barely skimmed off
